Swiss Turkey Spinach Roll

This one needs pizza dough. I had to make it by hand, which stinks. So if you can find already made dough [or if your local pizza joint sells it], I would go for that.

If all you have in town are hut's and john's? Here's the recipe I used:

3 cups flour
1 teaspoon sugar
1 teaspoon of salt
2 tablespoons olive oil
1.5 cups of water
1 package of yeast
non-fat cooking spray

Combine 1/4 cup of the water with yeast and sugar. Leave aside for 5 minutes. If you see lots of bubbles, the yeast is good to go. Combine all dry ingredients in a large bowl, leaving 1 cup of flour aside. Place wet ingredients in and begin stirring. Add the rest of the flour as needed to thicken the mix up. Once combined, spray another smaller bowl with the pam, place dough in to rise and cover with plastic wrap. Leave alone in warm dark place for 1/2 hour at least. Use half for this recipe and freeze the other half. Now onto the filling...

1/2 package of fat free smoked or honey turkey [I use the pre-packaged Healthy Choice stuff]
1/2 package of reduced fat Swiss cheese [about 6 slices]
small package of fresh, washed spinach
pasta sauce [the more plain, and less fat, the better]
1 egg
cooking sprayed cookie sheet

Preheat over to 425 degrees. Take the dough and roll it out on a floured counter or cutting board into a rectangular shape . Dough should be relatively thick in the middle and thinner as you go outwards. Take sauce and spread on dough. Starting with the spinach, then turkey and finally cheese, layer on top of the sauce. Make sure there is about 1/2 inch around the edges between the dough and filling. When done, dip a fork into the egg and spread it on the inside edge of the dough. Roll it all up and using the egg as a sealer, seal the edges. Brush the egg lightly on the top of the dough and put in over for about 20-25 minutes.

Wait 5 minutes then cut the roll into slices. Should make 6 or so. Use any leftover sauce for dipping. It's relatively fat free [oil and cheese only -- the sauce I use is fat free]!!!
