Mediterranean Pizza

Betty Crocker or Pillsbury envelope of pizza crust, prepared and refrigerated for a bit
1/2 can artichoke hearts, diced
tomato, sliced
20 (approx) Kalamata olives, pitted (I buy mine in a jar already pitted)
20 (approx) capers
1/4 onion, sliced thinly
1 cup part-skim shredded or grated (or whatever) mozzarella cheese
1 Tbsp. olive oil

Take the pre-prepared pizza crust and spread it onto a pizza pan. Mine was about a 12 inch pizza, maybe a bit bigger. It helps to put flour on the pan and flour on your hands when spreading out the pizza dough.

Spread the olive oil on the surface.

Add the artichokes, olives, tomato slices, onion slices on that and sprinkle the cheese over the top.

Oh yeah...preheat the oven to 450.

Bake pizza for 15 minutes.

Makes 8 servings at 3.5 points per slice, based on my best estimate. If you do the math yourself and come up with another figure...let me know!!!
