Veggie Goulash

This is a fast, easy recipe. And it's filling! This makes about 4 bowls!

Ingredients:

-- 1 cup of rice

-- 2 cans chopped/diced tomatoes, slightly drained

-- 3 can/veggies of your choice. I usually use a can of corn, spinach [I use frozen and defrost in the microwave] and 1 can of green beans.

-- spices

-- 1/4 cup of fat free cheddar

1. In a large pot, make the rice.

2. Once about done, cans of chopped/diced tomatoes. With or without seasoning.

3. Add veggies.

4. I add garlic and dry herbs [parsley, herbs de provance, onion powder, whatever you like and have] and lots of hot sauce/cayenne pepper

5. Cook for another 5-10 minutes until it all comes together.

6. Scoop into bowl and add cheddar.

7. Enjoy!
