Great Harvest Cornbread Stuffing

1/2 loaf Great Harvest Corn Bread, cubed 1"
1 lb. Turkey sausage, browned and drained
1 large green pepper, chopped
2 small white onions, chopped
1 clove of garlic, minced
2 TBL minced fresh parsley
3 large tart apples, pared and chopped
1/2 c. dried cherries
1 c. chopped pecans
2 eggs, beaten
1 c. milk, divided
1/2 tsp. Salt
1/2 tsp. Black pepper
1/2 tsp. Red pepper flakes

Combine all ingredients (except for milk and eggs) in a large bowl.
Add 1/2 of the milk and eggs and mix. Pour into a greased 3 qt.
baking dish; pour remaining milk over top. Bake at 350 degrees for 45
minutes. (or stuff a 16lb. Turkey).

Yield: About 16
servings

Substitutions: half cornmeal cornbread and half sourdough (or similar density bread) will work fine if you can't get GH Cornbread.

Spiced ground turkey or turkey brats work fine if you can't find turkey sausage

I usually make this in conjunction with a turkey and give the stuffing a couple bastings of bird juice (four squirts or so).

I usually cook this for 30 minutes with a top and then 15 minutes with the top off to get a nice brown top.
