Rice With Milk Pudding

1 cup white rice
2 cups water
cinnamon stick
1 tbsp. grated lemon, lime or orange peel
pinch of salt
4 cups milk
1 cup sugar
1 tbsp. vanilla
powdered cinnamon

Combine the rice, water, cinnamon stick, grated peel and salt in a saucepan. Bring to a boil, uncovered. Once it startss to boil, reduce to a simmer and cover. Continue cooking until all the water has been absorbed.

Add milk and sugar. Continue simmering, stirring constantly until it starts to thicken. Add the vanilla a cook for 2 more minutes. Remove from heat and let cool about half an hour. Place in individual serving dishes and refrigerate. Sprinkle with cinnamon before serving.
