Miniblinis

2 packages (8 ounces each) cream cheese
1/2 cup sugar
2 egg yolks
2 loaves thin sliced white bread with crusts trimmed off
1 cup butter, melted
Cinnamon and sugar, mixed together
Sour cream and jelly (if desired)

Combine cream cheese, sugar, and egg yolks in bowl and beat until smooth. Flatten one slice of bread with rolling pin and spread with cream cheese mixture. Roll up slices jelly roll fashion and dip in melted butter. Coat lightly with cinnamon sugar mixture.

If preparing ahead, place in single layer on baking sheet and freeze. When frozen, transfer to plastic bag and return to freezer.

Bake fresh blinis - 8 to 10 minutes at 400�

Bake frozen blinis - 10 to 15 minutes at 400�

Done when light brown. Serve hot, accompanied by sour cream and jelly on the side.
