Chicken Caeser Wrap

1 tbsp. Plus 2 tsp. Dijon Mustard
1 tbsp. Fresh lemon juice
1 tbsp. Fresh lime juice
1 tsp. Orange juice concentrate
1 tsp. Worcestershire sauce
1/2 tsp. Minced garlic
Kosher salt (if using table salt, decrease the amount by half)
1/4 cup grated Parmesan cheese
3 tbsp. Olive oil
Parmesan cheese
1 chicken breast, chopped and cooked (cut corners by using pre-packaged diced & seasoned chicken or pre-cooked turkey breast from deli case)
Freshly ground pepper
2 1/2 cups firmly packed chopped romaine lettuce
1/4 cup croutons
Two 10 or 11 inch flour tortillas

Combine the mustard, citrus juices, orange juice concentrate, Worcestershire sauce, garlic and 1/4 tsp. Kosher salt in a medium bowl. Gradually add 3 tbsp. Olive oil while mixing with a whisk or fork. Stir in the cheese, set aside

Toss together the chicken, lettuce and croutons in a large bowl. Add the mustard mixture and toss to coat evenly. Season with salt and pepper to taste. Divide the mixture among the tortillas and wrap. Serves 2
